New Projects in Flour Milling and High Volume Production Baking

Two new projects have now commenced in flour milling and high volume production baking. Both of these industry sectors have been adapting operations in recent years to meet continued high demand and expanding consumer preferences for healthier options. Organic, gluten-free and wholemeal products are no longer a niche market. The qualifications and skills standards for flour milling and plant baking will be revised and updated to reflect current skills needs.

It is important that the qualifications and skills standards reflect real work practices.

We invite your input to help describe the skills needs for these sectors. The draft qualifications and skills standards will become available for broad industry feedback in September/October 2020. Flour Milling

Flour millers possess highly technical skills, working with increasingly sophisticated automated systems and processes to keep up with high demand for flour, oats, maize and other milled products.

As the machinery used in mills becomes more complex and the workforce becomes more concentrated, the skills needed by individual millers are changing.

As part of a new project, the Certificate IV in Flour Milling will be reviewed so that the current skills used in this role can be supported.

This will help equip the next generation of millers with relevant and up to date expertise.

High Volume Production Baking

The plant baking sector relies on skilled workers to produce products like bread, biscuits, cakes, and other baked goods that fill our supermarket shelves.

As this sector becomes increasingly digitised and automated to keep up with consumer demand, the workforce requires updated skills for working with automated equipment and enhanced traceability and supply chain systems.

As a result of these changes, industry feedback has indicated that the Certificate III in Plant Baking no longer reflects the skills required of job roles in this sector.

As part of a new project, the skills standards for plant baking workers are being reviewed to reflect the structure and skills needs of current job roles.
