Work is underway on four new meat industry projects, covering skills relevant to the Diploma and Advanced Diploma of meat processing, halal meat processing, poultry processing and game harvesting.

Diploma & Advanced Diploma in Meat Processing Project

To uphold Australia’s strong reputation for high quality meat products and keep up with high customer demand, it’s imperative skills at a management level are up to date and well supported.

The diploma and advanced diploma level qualifications support the development of skills in management and leadership and are vital to the future of the industry.

As part of this project, the Diploma and Advanced Diploma in meat processing will be reviewed to so that they meet the needs of a broad range of industry subsectors and are relevant to current job roles.

Game Harvesting Auditing Project

Formalisation of training in game harvesting has helped promote more consistent quality control over the past ten years. However, there is still a skill gap when it comes to the transport and audit of game meats.

This project will review the current nationally endorsed training options in game harvesting and develop potential new units or skill sets as necessary to address skills in game auditing and transport.

Halal Meat Processing

At present halal certification is provided by a number of individual organisations in Australia. While the industry is in a strong position, this gap presents a challenge in keeping Australian halal standards consistent.

This project will address the need for a nationally endorsed training approach to halal meat processing, supporting a more unified approach.

Poultry Processing Project

Poultry is a popular option with Australian consumers and demand is on the rise. To keep up with this, while maintaining the high quality of its products, the Australian poultry processing industry has become increasingly automated.

This change in work practices means new skills are needed across the supply chain to work with automated systems. This project will develop skill sets and units of competency to improve access to training in poultry processing.
